What you'll need
528 grams Lo-Fo Pantry Plain Flour
1 ½ cups (375g) water
2 teaspoon (9g) dry yeast
1 tablespoon (12g) brown sugar
1 teaspoon (4g) Low FODMAP Bread Improver
1 teaspoon (7g) salt
2 tablespoons (30g) Extra Virgin Olive Oil
to spray oil
48g linseeds
48g sunflower seeds
48g poppy seeds

Process
Step 1
Combine the water, yeast and sugar in the bowl of an electric mixer with dough hook. Whisk then leave for 5 minutes until mixture is frothy.
Step 2
Add remaining ingredients and kneed into a dough, about five minutes.
Step 3
Transfer into a bowl which has been lightly sprayed with oil.
Step 4
Cover with a tea towel and leave until dough has doubled in size, approximately 2 hours.
Step 5
Preheat oven to 205°C (400°F).
Step 6
Deflate the dough and divide into 10 pieces, roll each portion into a ball (80g) and arrange on a baking tray.
Step 7
Leave for another 10-15 minutes, allowing to rise further.
Step 8
Bake in the oven for approximately 12-15 minutes depending on the size of the rolls.
Step 9
Serve as desired.
