What you'll need
50g butter
¼ cup coconut oil
¼ cup almond milk
1 tablespoon ground coffee
1 tablespoon cocoa powder
½ cup brown sugar
1 cup Lo-Fo Pantry Plain Flour
2 teaspoon baking powder
½ cup almond meal
Process
Step 1
Preheat the oven to 160°C (320°F) fan forced and line a baking tray with grease proof paper.
Step 2
In a large, microwave safe mixing bowl, melt the butter and coconut oil together in the microwave.
Step 3
Add the almond milk, ground coffee and cacao powder and whisk until well incorporated.
Step 4
Add the brown sugar, Lo-Fo Pantry Baking Mix and the almond meal and mix until a smooth dough forms.
Step 5
Roll the dough out into 8 balls and distribute them evenly on the tray. Bake them in the oven for approximately 8 minutes. Leave them on the tray to cool before storing in an airtight container.
