Our Pikelets with Berries are perfect for morning or afternoon tea any day of the week! Made with our world first low FODMAP Wheat Plain Flour, these pikelets are delicious served warm or cold with a cup of tea or coffee. If its a school snack these are for; serve with your favourite low FODMAP fruit preserve or fruits. If you’re enjoying these at home, serve with a scoop of lactose free cream, low FODMAP fruits and a drizzle of maple syrup! What you'll need
1 cup Lo-Fo Pantry Plain Flour
½ teaspoon baking powder
½ cup lactose free milk
1 egg
2 tablespoon caster sugar

Process
Step 1
Combine all ingredients in a large bowl and whisk until you have a smooth, thick batter. 1/4 cup more milk can be added at this stage if a thinner consistency is desired.
Step 2
Heat a frying pan on medium and add a splash of oil.
Step 3
Spoon batter on the hot pan, a couple of tablespoons at a time.
Step 4
As soon as the pikelets begin to bubble, flip them over for a minute on the other side.
Step 5
Set aside covered loosely with foil before serving with fresh, quartered berries or other seasonal fruit, lactose free cream or drizzle with maple syrup if desired.
